This is very discouraging for me. I am also starting to wonder if I'm just losing my desire to really pvp because pvp in this game just frustrates me to no end. I want to be able to enjoy it. Hell in beta pvp was the most fun I had since Dark Age of Camelot. Now with the lag issues, people being super powerful with me having little to no chance of even matching anyone far as I can see, I am just wondering if my desire for pvp is in vain?

Knowing how and being able to are two different things. These guys are professional game developers. They don't work at Best Buy, they don't build cars on an assembly line at Ford, they make games. You can bet your ass they know how to do it, the constraint is the ability to do it. Be it time, money, technology, or human resource limited, it's most certainly not "oh they don't know how.". It's all they effin' do, day in day out, year after year. If they don't know how to optimise a server architecture, they don't work on server architecture.

They know how, just like you'd expect an engine mechanic to know how to tune your car, but that engine mechanic might just not have the time, tech, number of people they require, and/or the money to hire on more people to be able to. I know not to spam... You seem to be missing what I'm saying. If I get hit once with anythign half my life is gone, if I don't hit hardened Ward I'm dead in 2 hits. 1 hit on me WITH Hardened ward and the ward is completely gone. So in order to keep form dying in 2-4 hits, I have to spam Hardened Ward. I don't even GET a chance to use anything else. I was in PvP earlier with a group of us, about 14 or so. 1 sorc who was so tanked out we couldn't even get them out of shielded hp. Yet he was tearing through us like a hot knife through butter. If I was so much as hit I was dead. If it weren't for getting heals I'd have died any and every time he targeted me. I can't really explain how bad that is.
It's not skill spam, but the rotation and position you use that is key. Use the skills in an order that makes them build off of each other. Then, move around, don't stand in one place.
Everyone else who is going against you just has 5 skills on their bar, they are in the same boat you are in.
Also, PvP, and Trials requires a more focused build, you can't be a Hybrid, either go all Stamina or all Magic.

Even if they know how to do it, the fact is the game was WAY more stable in BETA than it is now I am more than inclined to complain and voice a concern. The lag issues are getting progressively worse and it's now bleeding outside of pvp into pve. While it does play a huge part in my frustration with pvp as it is currently, there is more to my frustration than just the lag.

that's true that hardern ward can only take one hit for you, and sorc usually die in 2-3 hits if you dont response in time, that's why sorc need more skill to be good compare to DK or Temp.
the adv of being a sorc is our moblility and burst damage, if there's a lot of enemies, try not to stay in the same place, use BE to move around, cast skills like daedric curse, endless fury and frag from distance, that make your target so hard to find you, avoid using something like fire staff attack which attract too much attention.(in this game ppl intend to attack the target others attacking, if one enemy attack you and all others will follow and hardern ward cannot save you.) Our dps is low so use your burst damage to take down enemy is the only way you can kill them or they'll start healing or stacking shield.
remember if you're not using a tank build, sorc and NB are similar, NB use cloak and sorc use BE to move around and look for cover. in an open area if you can't find a cover, try to stand behind a DK and cast, DK who spam wings are the best cover in this game.

I don't presume to know the game of football better than Payton Manning, but when he screws up, I don't presume it's because he doesn't know how to throw a football. I'm actually more pissed because I know he knows vastly more intimately than I do that he just *** up.
Pros in a competative industry teaming and boiling over with remarkable talent don't get to be ignorant. An ignorant professional in that industry is very quickly labeled "unemployed".
