This is very much what happened to me but after 1.5. I removed all add ons and reloaded the ones I felt were essential.
I'm all for improving the game's UI but is it really the monstrosity that most people claim it is?
Let me sum up some of the most glaring examples:
- Too few categories in inventory/bank (try finding that one trait stone or ingredient whose name you don't quite remember among all the clothing/woodworking/blacksmithing/provisioning/enchanting/alchemy materials);
- No information on which of your items has sold, or in which guild store (not a game-breaker, but still... why?);
- Impossible to reply directly to a mail from another player - you have to type his character or @ name, and might conceivably get it wrong;
- Lack of text search in guild stores (certain searches may return hundreds of results spanning several pages; for instance, good luck finding a green recipe by name using the standard UI);
- No cross-guild store search, search options not always saved between searches (forces you to select your search criteria over and over again when switching guild stores);
- Items reference stats that are nowhere to be found on the character sheet (e.g. elemental resistances);
- No option to prevent deconstruction of certain items, made worse by the fact that you can deconstruct items stored in the bank;
- No indication regarding known/unknown traits, which makes managing your researches a pain;
- Visual/audio cues for certain abilities/buffs easily missed depending on conditions (my crystal frags proc sometimes doesn't make the usual sound, and I can't always be looking at my hands to check whether they're glowing; besides, the glow can be missed if there are a lot of effects on screen);
- ...
Note that most of the things mentioned above have NO INFLUENCE WHATSOEVER IN IMMERSION, since they would only appear when you have a menu open (inventory, mail, guild store).

@Troneon that's a lot of add ons! I agree a good deal of those should be toggleable but since of them, like the sky shard map offers a bit too much of a shortcut, I think.

I am a heavy explorer, I don't leave an area for a lot longer time than most people, I complete everything, find everything, do everything before moving on. Over lvl 30 on one character and still not even left greenshade or even half way through it lol. The map addons and skyshard etc save a lot of time finding the stuff I might have missed, I can turn it on and check if I missed anything.
I agree in theory, but part of the point here is that console players probably won't get the chance to have any add-ons, and some of them provide really useful functionality.None. That's a different subject altogether. It doesn't mean we need to have add-ons included in the PC UI, the facility for that already exists. The default UI is fine as it is for the PC, if it needs to be varied for the consoles then that's fine but no need for it to affect the PC version.
Besides which, I don't find a need for any add-ons with the PC version and wouldn't therefore be needing any if were to play the console version, but that's just my personal preference which is all any of us is being asked to provide here.

Use Minion addon manager, installs and removes as well as updates addons automatically. Saves a lot of hassle.

Has there been any improvements to the console UI that has adopted popular add-ons features? I.e. sorting/organizing features, permantly marking junk items, DPS meters (optional of course) or other quality of life features?

There will absolutely be numerous useful updates to the console UI, and some of the updates are based on popular PC add-ons. For example, a lot of the functionality in the "Loot Drops" mod is a part of the console UI by default. There are others add-ons we have drawn inspiration from as well, but I'm calling this one out specifically because I really like it.
