Old Provisioning Ingredients are now rare?

So the new update got rid of many of the old ingredients but we got to keep them and we can trade them. Therefore, have the ingredients become the equilvalent of phats, santa hats, etc from runescape of ESO? I am thinking they will stop them from being able to be traded or the ingredients will never rise since there not vanity but just sit in your inventory. Still food for thought.

The ingredients that weren't converted into any of the new ones were supposed to become "stale ..." and have no use except for selling to NPCs (with increased value). Did that not happen?

I would have kept some Moon Sugar for RP, but it got converted to Beets. Deprived of his daily sugar rush, my Khajit provisioning mule sold all the outdated stuff in his inventory for around 30k, went to the local tavern and shouted "All the rounds tonight are on this one!". I will probably never see him again.

@FullMetalGunner, I really don't see your comparison with 'event' items and 'toys' from other games, I see no value in keeping something 'old' even to an RPer, as @stefan.gustavsonb16_ESO pointed out the most obvious 'old' items that could have RP value were changed for the most part.

I was happy to get just short of 25k vendoring the stacks of 'old' ingredients and being able to eliminate a mule which I had used to store them on.

If you are in NA, i would love to purchase old stale ingredients for substantially more than the NPC price (as long as I don't have them.
