Actually, saddle-curing was a method used extensively by the Mongols (and probably the Huns and others). You put a piece of raw meat under your saddle as you ride your horse all day long. By the end of the day, the meat is ready to eat. It gets tenderized along the way, and somewhat "cooked" by an enzyme in the horse sweat (similar to how ceviche works with sea food).
Yes peeps, nobody stole your sweetroll!!!. It's just a Veteran level recipe now. Moonsugar as an ingredient has also been removed but it is not actually gone from the game. It's just found in seasonings (description of the food, but not usable)
