It might help people recommend if you provide info such as what kind of RP you are interested in joining. I am also fairly new to the world of RP but have found that it is quite fun. What its hard to see from your seat (where I was a couple months ago) is that there are many specialty guilds for RP. You can check the links in my Sig to see what I am doing currently.

I guess perhaps the most effective way to get effective advice would be to think of a background story (just a brief one) and post it here so more exp rpers can point you in a hopefully good direction. Since you're a Nord, I know house Telvanni and House Hlaalu accept non Dunmer ...you may have trouble with other houses I'm not really sure. There is also Temple and Ashlander guilds for EP and I am sure others....sigh dunno if I've helped at all.
