If you Ambush properly when he's not expecting it from behind and not from the front then he won't be able to block before the Soul Harvest. Everything else you just said I've already covered. If he doesn't die from your stealth attacks or you engage him in the open then -
Shades, Crippling Grasp and Sap Essence, sometimes I'll throw in some Caltrops if he's an Immovable user. I wish him all the luck with a destro spam staff when Sap Essence has higher range, if he closes me down and I need room use I Mass Hysteria although the smart ones will be using Immovable.
If he uses a standard I just roll out of it and stand just outside of it. If he wants me in it he's going to have to pull me of charge me and (I'm blocking) I use Veil.
Worse case for me with a DK it's a stand off and no one is dying.

That's not true though. The way it works is, you press Ambush and while the ability is channelling you keep spamming your next attack (Surprise Attack, Soul Tether, whatever). When Ambush lands the next attack will immediately hit with barely milliseconds of delay from Ambush.
This is a known mechanic and works fine even when hitting out of stealth. When doing it from stealth, there's precisely 0 chance for the opponent to CC break and block in that time. There's various videos showcasing NBs doing this to great effect, like shebali's vids.
As Capuchin said, a DK and a NB of equal skill and similar (sustainable) builds is a long long fight that is usually a draw. Yet people like to perpetuate this whole "1 DK can kill 5 people without thinking".
Anyhow, I don't really feel like posting in this thread any more due to the extreme ignorance and/or bias exhibited throughout. It's easier for people to just complain instead of learning game mechanics and theorycrafting viable builds. Yeah this is the best way to hit a target from stealth, although I do take a chance and drop Shadowy Disguise in if I know I've landed my hit perfectly from behind for the 100% critical Soul Harvest these days.1 -

No. My point is that you said sap essence has higher range than destro staff spam, which is not true.
Which I can block unless he uses Impulse. Which I have greater range over and he can't block.
So he can keep on whacking away with Crushing Shock and I'll just keep on blocking while standing 8 meters from him anyway hitting him with Sap Essence that he can't block and heals me for over 130 on every hit.
AND so the DK and I go around and around and around and get back to, the ones I can't kill can't kill me.0 -

Having a DK myself, there are a few key things which, if you disrupt/mitigate, it really neuters them.
1. Avoid the 2nd Flame Lash. The first one allows a 2nd one which heals. Dodge roll the 2nd one - no heal.
2. Apply healing debuffs. Make sure your weapon has Disease enchant, and hit them with Lethal Arrow to open (healing debuff).
3. Use Caltrops to drain stamina if they keep block up. Shades can do this also.
4. Dark Cloak to purge off DoTs. A lot of DK damage comes from Fire DoTs they apply to you. Also, alot of DK DPS comes from single target attacks (Invasion and Whip). Don't try to "stay" invisible, just Cloak in your rotation to purge DoTs and break their targetting.
