Your missing the numerous (nay countless?) bug fixes (and new bugs?!).
Also, why the hate for the existing updates? LOTRO didn't get as big as it is over night; it took what, 6 or 7 years? If you're so impatient your in for quite a disappointment.
Here is a brief summary of the patches and content we have gotten:
1.1 - Lower Craglorn - group PvE content
1.2 - Veteran Crypt of Hearts - group PvE content
1.3 - Dyes, Trials hard modes, guild heraldry - group PvE and miscellaneous time killers (which were needed)
1.4 - Upper Craglorn, new trial, dragonstar arena, larger delves - PvE group content
There have been 0 updates with any significant content for players who don't either do trials or other group content. On top of this there has been no new content for PvP since launch which is outrageous. I love this game, but not having any content for PvP after this long and gating levels behind content that most people don't want to do is just poor planning or neglecting a large portion of your player base. ZOS, when are we going to get some PvP content? Or just some solo play content?

Craglorn: 1 zone (2 sections)
PvP Player Content:
Cyrodiil: 1 Zone
There are a total of 20 zones full of content for single/solo players to enjoy.
While I agree that PvP does need love, it is in the pipeline. Zos is not neglecting those players, it just isn't happening as fast as you, and many other pvp players want it to happen.
Also, the next time you are in game, open the map. See where you are on that map? Zoom out.
If you were in a city, you should now see the region/zone you are in on the map.
If you were not in a city, you may already see the zone/region map.
Zoom out again.
You should now see the entirety of Tamriel on the map.
Count how many active zones there are compared to how much space there is on the map.
There are 22 active zones on the map.
That map has enough space for at least that many more zones.
I am sure that Zos has plans to populate those zones in the coming future of the game.
Nope, they will not all be populated by release 2.0
They may not all be populated by release 3.0
But I would bet you a banks tab full of legendary content that they do plan on using those spaces as the game grows.
But lets take a moment and harken back to a well used, and sometimes over used phrase, shall we?
Rome wasn't built in a day.
You, and all the rest of us, are facing the same issues that face every other online game at, or near, release.
We are the ones who run smack into the bugs that weren't found or were not resolved in beta.
We are the ones who run into exploits, and users who will do anything and everything to try to game the system (literally) in an attempt to earn real money off of the backs of players.
We are the ones who run into issues of running out of content quickly.
This is the bane of the early adopters for anything, but especially with online games.
It is the nature of the beast when it comes to anything that is new.
If you are not happy, let your sub run out then come back in 2-3 months and see what if any new content has been released, then decide if it is enough to renew your sub at that time.
Alternately, you can find a community/guild/group of people you like and you can jump in and take part in the content that you normally wouldn't.

Whatever. In the end, it is only your decision whether or not you wish to continue to hang around as part of that Early Adopter group, or if you wish to come back later to see how things have changed.
Personally, I founded a nice guild with a friend and we have grown to have a really good group of about 30 people who like doing both solo and grouped content.
Otherwise I too might have dropped the game sometime within the 6 months and waited out a few months before trying to come back.
