DC Orc, mainly because of the lore, a little because Bill Nighy is my king, but also because elves are dumb and I hate them (yes, I know that Orcs are Mer, but it's different because reasons).
Hope is the first step on the road to disappointment.
I picked an Imperial for my main character (a DK in EP) because I was looking forward to play a heavy armor tanking class and imps have good passives for tanking. Also, Imperial looked neutral enough, which felt a good thing at the time...
I always choose khajiit because I became so invested and interested into their lore. But what drove me to them in the first place was the fact that they were cat men.
Everything else, including the passives that just so happened to fit my play style, was just a bonus
I wanted to be imperial because of the Stamina bonus . But during beta i played Breton. I choose Breton instead because i got attached to him. Not looking at racials and lore. But i think i made a good choice in the end. The racials help for NB also and i also like the lore.

Among the many alts I have (several are "bank mules"), my mains are Imperials and Nords. For the looks (especially), racial boni and lore too. I do have a Bosmer too, which is pretty fine, but don't play that one much, yet.
I kinda like Altmers as well, but don't have one, since they are all about magicka, and I loathe magicka.

I choose my race(s) for purely aesthetic reasons. I'm sort of a typical girly girl irl and before playing Skyrim, had never really played games that involved fighting (I made the transition from being a Sims addict to being a Skooma addict). so naturally I enjoy being able to spend ridiculous amounts of time on my character's appearance. I play as a Breton if I want to feel like a part of myself is really in the game, or I play as a Bosmer since they're my favorite of the Elven races.

Chose Breton to min/max a magicka-heavy Templar (LOL).
Breton is great for the magical care bear route and no cap on cost reduction. Breton passives seem to work well for the Templar's bursty actives. Hence why the Breton's spell cost reduction comes in so handy despite the easily-hit soft cap on spell resistance. This is similar to why Altmer elemental damage and a destro/staff-heavy sorc go so well together despite the overcharge on magicka regen. Also, this is similar to why Altmer magicka regen and Templar go so well together despite the general lack of elemental damage from Templar abilities.
