Trophies just display an animation when you use them with a few small exception (I think the bear trap can actually be used to trap enemies?). They are just like souvenirs (I put all of mine on a mule so they don't take up too much bank space)

You need to find all collectibles of a specific category to get the corresponding achievement (which unlocks a new common colour account-wide and rewards your character with 10 more achievement points).

Ah, okay, thank you! I really just had no idea about Collectibles so I am grateful to have that finally explained! LOL Been playing since launch and I still feel like such a noob!
