In response to @araflin suggestion of a mini game zone it got me thinking about horse racing, then in turn horse breeding.
Much like a craft, it would require a long term commitment. You would need to outlay gold for two breeding mounts and based on feed and pairings you could breed horses with particular stats and them sell them. It wouldn't be a cheap profession so the market wouldn't get absolutely flooded with high end mounts. Just an idea and open to feedback.
