When you hit max level, do each of the individual skills stop leveling too? eg. If I were to hit rank 10 on bow, would this stop increasing once I level the main level cap (50?)?
My thoughts are, it just keeps rising until you max it so you can keep spending any skill points earned after main max level on abilities...
Once you hit V1, you're still technically level 50. Any mob or quest level 45+ will give XP towards your skills, even if they don't give VP. Nothin' to worry about.

Yes they keep leveling but it becomes a pain once you are VR12 if you want to switch weapons, especially if you already have done all the quests. There are ways but it is actually a real pain.

It's correct that you have to stay within the +5 levels and will not get VP's (though you will get them for end of quest rewards).
It's actually a good time to polish off some of your alternate skills, by swapping them out. Just be careful, if you swap 5 at once, it can lead to your demise.
Better to stick with at least one or two tried and true and level the others up in the process. Grinding is good for this, but somewhat different since they changed the dungeon layouts.
Also, for what it's worth, if you can manage one skill bar, have the other one with all the skills you are trying to advance (up to 5 at a time), and switch bars before quest turn in to get the maximum benefit.
Just because you don't like the way something is doesn't necessarily make it wrong...
