I don't see how there isn't enough, but apparently plenty of players disagree. I do every crafting profession and have stacks of mats saved for each tier of level crafting and still have room left over in my bank (at 210 I believe so far) and still have a few more upgrades I could do. I think there is plenty of room.
My biggest belief is simply that: trophies, costumes and maps should not take up inventory space.
I currently have a bunch of 'mule' alts just to store items, then again - I'm a bit of a hoarder, plus I plan on mastering all professions, at this point however -- I only hoard the stuff I know that I'm gonna use. More bank space would just make it easier for me, less re-logs etc.
Do *I* need more/cheaper bag space? Definitely. Does the average player? I don't think so. I won't go out of my way asking for more space, if that's their design choice then they should stick with it and stop catering left and right.

There are addons to list your alts items so you don't even have to swap back and forth searching for that one item you can just open the list know what it's on and go on that character.You can also try post it notes on your desk.
You can also just buy bags for your alts and give them horses and level them for bag space. You can get 51 slots from a horse if you buy the 42k one + 110 slots per character. At 8 characters on your account, that's 1288 slots for your entire account not including the character bank which is 240.
While I wouldn't be opposed to more bank space, the current system is designed that way for a reason and I have no issues with running out of space.
One reasonable goal in Provisioning is to get to level 28 with as many of your characters as possible, so that they can all get the first hireling perk. That's a reason to keep low-tier materials.Provisioning is the most difficult craft in terms of materials, but it's by far the easiest to level, meaning you can forget about low-tier materials early on.
I voted for the minority opinion that there is enough bank space, and it's fairly priced. This is why:
1. There was a design option to discourage players from doing every single craft on the same character. You may question this design, but it seems reasonable to me. I personally have 4 crafter characters spanning all crafts in the game, and none have more than 2 crafts. All of my crafting materials are kept in their personal inventories, which are much more cheaply expanded to the current limit through bag space/horse upgrades. When I take out a character for playing, I dump the mats into the bank. They aren't mules because their purpose is not merely more bag space, but each carries their own trash. Provisioning is the most difficult craft in terms of materials, but it's by far the easiest to level, meaning you can forget about low-tier materials early on. Besides, the number of mats are being cut in an upcoming update.
2. Banks are gold sinks. They have been in many MMOs. If you sell some of the loot and don't spend your quest rewards, you can upgrade your bank as you level up (i.e. get access to different materials, etc.). It helps if you don't continuously pay for equipment or repairs (which aren't really needed pre-VR content, although they may help in group dungeons). I'm currently sitting on 100k+ gold and haven't upgraded my bank past 160 because so far it's enough for my needs.
I wouldn't mind being given infinite bag/bank space. But as it is, I don't feel this is detracting me from my playing experience. Instead of increased space, I'd love to see a better UI for bank management, with categories such as those in the Advanced Filters add-on, or the ability to deposit/withdraw multiple items at a time.
