I can sustain aoe dps for about 1.30 minutes at 1.385k dps
I can sustain single target dps at 700+ for about the same time, maybe more with clipping. I used to be able to do more.

DK and Sorcs can just about touch that number, I pull about 650 on my Sorc and just over 700 on my melee DK.
The templar is a jack of all trades class. By class abilities alone he can range DPS, melee DPS and heal team-mates. In comparison Sorcs can only do ranged DPS and DKs can only do melee DPS.
What would the point of those other classes be if your Templar could do what they do as well as them, on top of your other abilities?
You've confused play as you want with being the best at everything whichever build/class you play. That's an unrealistic expectation and I'm happy it's not that way.
PS: I do play a templar too but with a healer/tank build, so I know the class a fair bit. I don't competitively DPS with him obviously.

As I can admit, OP is just scum and will not give his gold to this cat-templar, right?
I don't know about sustained dps in PvE content but dueling on the PTS my templar was able to dish out enough burst damage, utility and self-sustain through heals to wipe the floor with most DK, sorcs and nightblades. Of course that was PvP and it seems like most people are trying to balance the classes based on PvE - where one might argue that it is actually more a matter of tweaking the PvE content rather than the class.
Though the class could use a few tweaks in the sustain department:
1. Radiant aura - make a morph than restores magicka and stamina and one which restores health and stamina.
2. Increase the values of restoring spirit or it restore it to a less powerful version of its original incarnation.
