Can anyone tell me how emotes work (ie how to create and use them) and is there a guide or list anywhere?

You can't create them. I would love to animate my own emotes, but I can only imagine how quickly it would get abused.

You execute an emote by typing /action
/yawn
/laugh
/lute
etc...

There's some addons that add a list of them to peruse.

Actually, the combination of the following:

/drink /dancedrunk /faint /dustoff

is hilarious out in front of a tavern in a busy marketplace.

Wykkyd's Framework is an add-on that allows hot-keying multiple emotes together (it's a great add-on for a number of other things too).

In Davon's Watch, whilst there was a synching issue, I ended up in/under some stairs I was trying to walk up.

My toon ended up with his head sticking out of the stairs, so while people walked toward the stairs, I used the emote /wave or /shakefist and you should have seen the reaction of their toons! There isn't an emote called doubletake, but I reckon they still did it!
