What are they and how do you get them? Are there types for all the craft professions?

@One_ofMany alchemy is the only craft for which you can't get a hireling. You get them by putting a skill point in the specific craft you want and each craft has a different rank in that craft you need before you can "Hire" one.

Hirelings are NPC's that go out and find items specific to the craft you hired them for. They will send you an item in the mail every 24 hours, the count-down starting the moment you hire them.

Put an additional point in the hireling will get you a better chance at better items at the same 24 hour count-down. A final, 3rd point will give you the same as the second point did, but now the count-down is 12 hours not 24. So you get items in the mail twice a day at that point.
