I was dissatisfied with existing solutions. So I made my own. I think it's quite a bit better, as you can just select sections of text and color them easily in multiple ways:
  • A given HEX code.
  • Select the "Picker" button, and get a color wheel to select any color you like easily.
  • Choose one of the predefined color squares.

You can also select text and click the "Remove Color" button to remove its color. There is also an easy "Undo" button option that keeps a history of 25 actions.

Along with this. The editor is pretty smart...Select some text that is in the middle of a paragraph that is colored red, and want to change it to a different color or remove the color entirely for that selected text? Just select it, and recolor it, or remove the color. It will automatically ensure that all text surrounding what you selected remains the same color as before.

Once you're done, you can easily export it in a multitude of formats. Markdown, HTML, plain text (.txt), and even JSON, in case you wanna use it for your own processing for some reason. The oddball export option is ".motd". This is for my upcoming VS Code extension that replicates this behavior locally. You can also just click the "Copy" button, and it copies what is in the Editor field, which you can just paste right into the MOTD or any other text field in the game for the same results you see in Preview.
