Deleted Playstation Account

Hello,
I deleted my PS account a couple of years ago. It still shows that it's linked in my ESO account page. If I unlink the old PS account and link a new PS account, will I still have access to my old characters, etc? Not sure if the data is linked to my old PS account or my ESO account.
Any help is much appreciated.
