How does an mmo noob choose the right guild?

Hi, I'm relatively new to the MMO world and I'm wondering how one decides which guild to join.
I played a bit of SWTOR (my only other MMO ever) when it went F2P but I never joined a guild there. Sometimes I would join up with a few random people through the chat to do group quests, but otherwise I pretty much played it like a single player game. However, I noted that the ShoddyCast on youtube strongly advised new MMO players to join a guild in order to fully enjoy ESO.

So my question is: What should I take into account before I choose which guild to join? If I join a guild (or 5) in ESO can I later leave the guild and join another or am I stuck with the ones I choose?
I like both RP, PVE and after level cap maybe PVP, but should I just choose one at random, or how do I find the right one?

I would look in the guild recruitment forum. List what your looking for in the guild, age, style, focus etc and see who responds. Dont forget to list your Alliance.

Beyond taking your time to look through the guild posts, there is no way to guarantee getting it right for veteran or rookie alike. Guild posts may be aspirational beyond their abilities, or just downright false. The only way is to suck it and see and don't be afraid to move on if it isn't right for you.

Yes, you can leave any guild after joining it. You aren't stuck with them. As @Azarul said, the forums here are a good place to start looking. Since you can join five guilds, though, you don't have to wait for one that has everything you want. You can join one for PvP, one for RP etc... Although most guilds will offer a bit of everything.
You may say I'm a Dreamer but I'm not the only one.

That guy seems to know what he is talking about!

Like above, you dont have to stick with a guild and can leave anytime. Just have fun, and for the love of... dont wait until 50 to PvP, you can start at level 10.
