For the beasts, their purpose is just like any other beast. They exist, they do their thing, and then they continue to exist.
For the intelligent creatures, I have much the same question. They exist in large quantities, and to us mortals, they seem to do nothing more than stand around the 'water cooler' until a mortal comes along, then they try to kill it. Whether mortals are just incapable of understanding that they live their lives at a higher level than can be understood, or whether they are inspired by the idea of standing by the water cooler doing nothing at all for eons without end... ¯\_(ツ)_/¯

The intelligent daedra that attack you are doing what they want to do - attack and kill/subjugate mortals, and do so at the whim of their prince (generally, but not always). You don't see the ones who do other things, because they're not interested (generally) in being around mortals. Visit the xivilai merchant in Coldharbour inside the Reaver Citadel - he will tell you.
I know but they are still just standing around doing nothing. Certainly, some of them have ‘jobs’, but mainly, they seem to be just doing nothing.

Every Daedra comes from a Prince, entire types of Daedra can be applied to only a single Prince such as the Golden Knights and Dark Seducers of the Shivering Isles. They fall in line to their military society where their purpose is to serve. That said, they also lack the morals of mortals, they do not care for us nor understand friendship, only business partners (with some exceptions, so unsure if this is their societal pressures or if they're incapable of mortal connections). The Daedra of Fargrave escaped their Prince to forge their own life with their own purpose. Some Daedra will change Princes as well. So, generally they are I guess sociopathic militant cultists unless they decide otherwise.
That said, they don't enjoy dying. They don't fear it for they do not know what it is to truly die. But their revival isn't immediate, and it is very unpleasant. There is a quest about the death of a Dremora: https://en.uesp.net/wiki/Online:Peace's_Wretched_Price. The UESP article here isn't complete so you'd have to go do the quest yourself.

I am not really feeling the whole "one of us" vibe that Fargrave tried to give off. ZOS didn't sell it very well, which I suppose is a good thing. It messes with the bad guy dynamic that Daedra bring to the franchise, and not in a good way. A minor part of a minor DLC and one that can easily be forgotten.
Blackwood and Apocrypha did a better job with neutral daedric creatures by introducing the "blue collar" variety. This is much more plausible, and not nearly as creepy.
But still, their main purpose in Elder Scrolls is to stand in a spot with one or two others until a mortal wanders by, then attack it. Making them "one of us" or giving them mundane jobs is notable, but just that.
As for why Fargrave is Fargrave? I have noticed that a core aspect of most known Daedra is that they have this obsession with mortals. Unhealthy obsession. They talk down to mortals, treat them like bugs, are eager to kill them, and yet, there is still that obsession. Fargrave seems to come from mortal-obsessed daedra that don't want to kill the mortals, for some reason. I think that it is because their unhealthy obsession has risen to heights where they desire to imitate them.
In any case... The whole concept of the Daedra becomes unsustainable when examined closely. The Lore tends to fall apart. This is why the whole "mortals can't understand" seems to be a thing. It allows them to exist without having to explain a variety of motives and behaviors that are contradictory.
