But, does that lock the alts out of doing the entire scribing questline?
I'm thinking about the low drop rates of ink, and I'd like to unlock scribing on my alts, but not lock myself out of those 12 inks from the entire questline, if I decide to do those at a later date.

No worries, I literally did the main quest on my main then took another alt for curating scripts via dailies with and to this day that alt still hasn't done a single Scribing quest and has every script(other than the quest ones) unlocked and fed all my alts the Pull/Brutality scripts.
