I feel lost

For the first time in Tamriel I got everything I needed - sets, styles, mounts, pets and houses. All characters levelled, all gears upgraded and inventory is stocked with thousands of potions, drinks and mats. 1000 crystals left used and no more need to grind for anything.

So I should be happy, but somehow feel lost. What do I do now except my favorite PvP and new quests?

Have you tried Tales of Tribute? I was very sceptical of this feature back when it was announced, but right now it’s by far my favorite activity in game and the one I spend most time with. If you play against other players it‘s another form of PvP and if you get good at the game and play against the Top 100, it‘s really fun. But it can be hard to get into it. I know a card game isn’t for everyone, but I wish people would give it a chance, after three years it‘s a very, very entertaining side activity.

When I don't know what I should do today, I just open the achievement list, filter it as unearned and look for something that call me on deed.
There is plenty of things to do in this list.

Working out achievement list at least for the sake of finding anything of worth to you is a good advice, also if progression feels like stopped you could always work on your performance and with new dlc ahead will be able to try new places.

Do you have any other characters? If not that would be my first suggestion.

I have one character per class. There is no point to have more now, thanks to the armory system.

I was there about two years ago, unsubscribed. Came back for one of the expansions and got into PVP. Having more fun with that than anything else to be honest. Recently the Cyrodiil population cap was lowered which is taking the shine off of it though.

Start over on the other server, if you haven't already done so, you'll be surprised how refreshing it is. especially if you don't pursue ambitions and targets but just play the game and enjoy the journey.

So you have one character per class, but have they all completed everything; all quests, etc?

That's a downside of account wide achievements, once done on a single character they're done on all. I've always wished that ZOS would implement a 'quest reset' option- so that we could completely wipe all quest completions and basically start questing over on a current level 50 character. Heck, I'd even be OK with resetting the entire character and level to up to 50 again.

Me, I log in every day to do endeavors, and crafting writs on one character even though I have eleven characters (I just can’t bear to do those crafting writs more than one time a day, it’s too much like work!). Then, if there is an event going on, I focus on what I need to do for the event. After that, if I still have playtime I pick a character that doesn’t have all the skyshards and work on that until I get tired of doing that. Someday, every character I have will have every skyshard!

Then, I may work on a house if I have time, do a few quests, etc. Not counting dailies, I’ve always not really cared for doing Main Quests on more than one character, (all my characters share the same world, and in my mind when a character has saved the world it’s been saved from that particular threat, and doesn’t need to be saved 10 more times) but I recently had to do Necrom on a second character in order to unlock access to some books (another thing I’m doing is trying to collect all of the book collectibles in the game, having been inspired by the library Tharnes and Noble over in the housing section of the forums, and also the Dark Brotherhood library there by @IrishJoe!) So, I came up with a mental trick to help me justify repeating quests on other characters. Just like sometimes in quests we go into someone else’s memory to relive the events they’ve already lived through, I tell myself my characters are doing that. Just shifting my point of view that way has opened up possibilities to go back and do all sorts of main quests with 10 characters that have never done them before, so from my point of view, there is still a world of content left for me in the game, and more coming soon!

I'm pretty much in the same position as having 'arrived' and needing nothing. I find it liberating however and love it. I now only do stuff I enjoy and ignore things I don't care for. There is a good list of things I ignore in the game but the list of what I enjoy is much longer. I'm happy enough doing one set of writs per day, doing endeavors that I enjoy, doing an event quest or two per day when there is an event going. What I really enjoy though is solo hunting non-dlc WBs and solo running non-dlc dungeons. That just never gets old. :)

    start a brand new account
start just a basic game, maybe with ESO+
don't give the new account ANYTHING from any other account you may have on established accounts

You go from having Nothing to do, to having too much to do

And the new account will end up being a completely different ' Feel ' to it.

Do I do this on occasion ? Yes.

was also bored and just started a new one, using these parameters 2 days ago.
got my mount from scalecaller crate today - Frost Apex horse popped. Currently level 16, started Psijic quest so I could reach Arteum. Now I can start grinding Antiquities.

I tried it for a bit. Was fun till I lost to rng coincidentally too many times in a row. Haven't looked back.
I have no will left to help with lag until high action per minute devs play via a vpn from Asia or Oceania to NA and live stream thier experience of thier actions being declined by the server because they are out of frame.
