I think both maps and surveys should be stored in the craft bag too, and be usable from there. I might actually do them from time to time then

Because I'm almost always in the middle of doing something else when I get a map drop.
I'm not stopping in the middle of something just to go somewhere else to dig up a map.
I save them for Endeavors that call for them, or I plan specific time to dig up a few.
We can sell treasure maps we get, so why can't we sell surveys? We can sell the materials we get from them, so why not let us sell the mat "maps" and save time and inventory space?
And yes, what a waste of time to have 5 separate, unstackable copies of the same treasure map. Four in the bank, 1 in your inventory. Run around looking for a barely noticeable dirt mound, dig it up, dismiss your companion and pull out your banker, find another copy of the map, withdraw it, dismiss the banker and resummon companion, mount up and ride 1/4 mile away, turn around, ride 1/4 mile back to where you were a minute ago to respawn the dirt mound, dig it up, dismiss companion, resummon banker, and repeat three more times?
Of all the time killing, gameplay stretching mechanisms ZOS invented to keep us logged ln, this is by far the most obnoxious.

We do not need to dismiss our companion to use our banker. When we use the banker our companion is temporarily gone until we dismiss our banker at which point the companion just appears again.

Cos they’re not very interesting to do in the first place, or they drop when I’m in a trial or dungeon etc.

Yes, it is done at the same time, but since you cannot have two assistants out at one time, you must first dismiss the current one to activate the desired one. The action of summoning a banker, merchant, or fence begins with the desummoning of the companion. If it did not, then there would be a brief period of time in which the player would have both out at once, and that is something that ZOS says we are not able to do. And as your ZOS quote states, the dismissal does indeed take place first.dismiss your companion and pull out your banker
