Plenty of NPCs with nice personalities in the Thieve's Guild DLC, like Quen or Velsa maybe.
They should sell companions in the Crown Store, even if they're generic ones, like a Pact/Dominion guard or Dremora even. Variety at least, instead of seeing all the same companions everywhere. At this point I think companions are just as important to your RP or what you use to express yourself or your character as mounts, outfits, etc, are.

He also could just be assigned to commentary duty, his voice makes me smile every time I do that quest
But I don't think he'd want to leave his home, no one would be there to take care of Gordon or Horse

I actually wouldn't use an existing NPC from elsewhere in the game as a companion even if it was available, it would spoil that NPC's existing role for me, and I prefer my characters to develop their own relationship with one of the existing companions.
When it comes to NPC's- Fennorian or Skordo The Knife.
I adore Fennorian's personality and scholarly inclinations, while Skordo just makes me laugh and seems like a good buddy to have around. I enjoy him every time I see him. Really hope that if we ever do get an Orc companion, that its a male with a similar personality. (Female orc would give me "stuga is following you" vibes >>;)
But ultimately, I'd prefer to design my own companions appearances and personalities. There's many characters I've created who are friends or loved ones of my main characters, who would be at their side, that I wish I could have in addition to the current cast. It would be interesting to see what others would make as well if we ever had a "create your own companion" system. (Likely never going to happen, but I can dream.)

1. Meryline Barthel: She's just so sweet and with that song-magic thing she has going she could have some pretty unique skills.
2. Either one of Valentyn or Marcelle Dantaine: They could have a highly amusing roller-coaster questline where the spouses doublecross each other and the player like there's no tomorrow!
3. Fennorian. A nice vampire for a companion could be interesting (and I like House Ravenwatch so they could have cameos).
4. Skordo, of course.
5. Alinon the Alchemist. He's a cool guy in that irascible manner of his and could have an interesting skill set.
Fennorian would be my first choice! I loved having him be the healer when questing with him in the Greymoor storyline, and I'd make him my permanent healer. I also love his personality.
Revus Demnevanni would be my second. He would make a great sidekick, and I'd take him to every Dwemer ruin and Kwama mine in all of Tamriel so he could continue his Tonal studies and egg collecting.
There are many others, but those two are at the top.
Give them a reasonable amount of (and more location-specific) dialogue first.
Then: Revus and Fennorian.
