I like your original idea and here's what I added on to it.
There should be a check box on each individual armor piec. Uncheck = armor piece is hidden on character. Check = armor piece is visible on character. This willbe part of the equipment ui. . Equipment includes all armor pieces, tabards, and weapons.
The same thing can also apply for costumes.

But we already have hide helmet and hide shoulders, so can this be a thing? Or maybe even just being able to select a guild to display as we do character titles? The goal is to be able to rep a guild name through name plates and still have freedom of outfit styles.
For me personally, and others I’ve spoken to, this change would give us more incentive to farm / buy outfit styles, since we currently just avoid that whole system and use costumes.
