In my living room we have an HDR-10 ready UHD 4K TV with an Xbox One X. At first ESO had HDR settings, visible as options in the video options menu. However, I noticed that when I logged onto the bedroom Xbox S (4K tv but not HDR-10 ready) and came back to the living room Xbox One X my HDR option/setting were nowhere to be found. In order to get HDR options on my living room Xbox One X I had to reset it.
