Bloodthirsty is better dps, not to mention most mechanics happen towards the end of the fight vs the beginning. Some people will do 1 infused and 2 blood thirsty for a balance though.
why not have infused for trash and bloodthirsty for boss fights?
if you are on PC you can do this with the press of a button.
(Infused is also good for some pvp gank builds.)

Stam sorc for example starts at 1.3X with Major/Minor Brutality, then typically gets about 4-8% from slotting Sorcerer skills (crystal, pet(s), prey, armaments) and another 3-12% from Fighter's Guild (Dawnbreaker, trap, camo, silver shards). They also get 12% from wearing 6 medium armor. Adding that all up it is common to see multipliers over 1.5X.
Other medium armor builds can do similar things, and Templar has a class passive for 6% that can compete with Sorc. They need to balance this plan against Bloodthirsty buffing their high-damage execute phase though. Similar story for Necro and Nightblade, both have damage spikes at the end of the fight making Bloodthirsty useful even if their damage multiplier is near that 1.51X. Sorcs are an easy decision because their damage is front-loaded anyway.
Edit: Adding that there is no reason to mix 1-2 BT with 1-2 Infused these days. That was also a carryover from when BT was multiplicative instead of adding flat damage. Now you are better off going all 3 the same, into whichever option is best for your particular build.
