Do movement speed bonuses apply across the board including to mount and sprint speed?

I noticed that with the boat and cart system, you get taken to the equivalent tier of each alliance depending on where you start such as bangkorai to rift or to reaper’s march. Why are zones categorized this way, like what’s different between the tiers? I know vampire and werewolf is unlocked only in those three zones I mentioned.

Is it possible to get all the zone quest icons to display in a zone without ad-ons? In zone guide, only the next quest for that zone in chronological order appears, I believe.

There are separate speed bonuses for mount and sprint speed.

Those base-game zones are categorized that way from the way the game was initially built before One Tamriel. There was a specific order you would go through them and the mobs would get stronger and stronger as you moved through Starter Zone to Zones 1-5 in each alliance (Bal Foyen/Bleakrock - Stonefalls - Deshaan - Shadowfen - Eastmarch - The Rift for the EP faction for example). With One Tamriel it doesn't really matter anymore, but the historical remnants are there from the first year of the game or so.

The main story quests usually require doing them in chronological order and you have to do them sequentially. Side quests will show up when you get near them. Add-ons will let you see them anywhere on the map.
Tenacious Dreamer - Hurricane Herald - Godslayer - Dawnbringer - Gryphon Heart - Tick Tock Tormenter - Immortal Redeemer - Dro-m'Athra Destroyer
The Unchained - Oathsworn - Bedlam's Disciple - Temporal Tempest - Curator's Champion - Fist of Tava - Invader's Bane - Land, Air, and Sea Supremacy - Zero Regrets - Battlespire's Best - Bastion Breaker - Ardent Bibliophile - Subterranean Smasher - Bane of Thorns - True Genius - In Defiance of Death - No Rest for the Wicked - Nature's Wrath - Undying Endurance - Relentless Raider - Depths Defier - Apex Predator - Pure Lunacy - Mountain God - Leave No Bone Unbroken - CoS/RoM/BF/FH Challenger

If you only wear 1 weight of armor, you only get 1 copy of the bonus.

If you wear 2 or 3 different weights, you get 2 or 3 times as much bonus.

Bit confusing. What would 7 pieces of medium look like then? 1% bonus only or 7%?

2% at two points invested into Undaunted Mettle. Not 7%.
If you wear two weights of armor: 4%.
If you wear 3 weights of armor: 6%.

In the old days people would typically only have Undaunted (monster) helm and shoulder pieces farmed in some weights and traits, but not all. The Undaunted Mettle bonus gave you something extra for not having perfect gear. Stats - magicka and stamina - were also more important than they are now.

These days we have curated item drops and transmutation / reconstruction. I'd absolutely wear 7 medium on some characters. It gives you more weapon / spell damage and crit damage. This has always been valuable, but didn't work on a per piece basis in the past. Now it does. I believe 7 medium is statistically actually the best damage you can do on a stamina character. Of course you could have other priorities, such as more health, in which case wearing a light belt and heavy chest might be better, e.g. 1 heavy, 1 light, 5 medium. Choosing those particular pieces for light and heavy is optimal to maximise resistances and gets you +6% stats from Undaunted Mettle (at two skill points invested).

Mount speed is it's own thing, only affected by your riding skill, a PvP alliance war passive (which you can get from PvP intro quest, no actual PvP needed) and a green CP star.

Other movement bonuses stack, but only up to the speed cap, which is 200% of your normal movement speed. Reaching the speed cap is quite easy:

    Sprinting: +40%
Major Expedition: +30% (some skills, passives, armor sets)
Minor Expedition: +15% (some skills and armor sets)
Green CP while out of combat: +20%
    Celerity red CP: +10%
Swift jewelry: Up to 7% per piece (at gold quality)
Wild Hunt ring: +15% in combat, +45% outside of combat
Marauder's Haste set: +20% unique buff
    Wood Elf passive: +5%
Argonian passive: +50% speed while swimming (this may get you over the speed cap while swimming only; not sure)
