NPCs catch me stealing while invisible while I'm wearing heavy armor.

When I'm invisible and hidden, I'll take something from a container or lockpicking a safebox and certain NPCs will spot me. Take off the heavy armor and I'll be able to steal like normal but it is pretty inconvenient to have to do this each time you want to steal something just laying around or out and about, questing. Invisible should mean invisible! Even if you were to see your items getting lifted off the shelves and vanishing or hear the clanking of heavy armor, you can't see someone who is invisible. I know some guards use lanterns that can expose invisible players but random NPCs shouldn't spot you if they can't even see you. This is a very annoying problem. If this isn't intended, please fix this. Thank you!

There is a hidden stat called Security, at least it was called that in the Single Player Games. The higher the Security of the NPC, the more likely you would caught. Nobility in this game has High Security.

As for your Armor, Heavy makes you Noisy so you are heard. It is the noise you make that gets you caught, not being seen.

Finally, and this is the main crux of the problem, Invisibility only lasts until you do something besides walk around.

What you need instead is to get the two or more of the sets in the game that reduce the radius at which you can be detected. Change into those for Larceny. Change back to Heavy for Combat.
Enjoy the game, life is what you really want to be worried about.

Gary Gravestink "I am glad you died, I needed the help"

So, it's only certain random NPCs that catch me. Example: Malbirra in Mournhold. This is why I'm reporting this as a bug. I can be completely hidden and invisible and I'll steal something and get caught. The point you made about the security mechanic is probably the reason for this. I'll still be invisible after I have stolen the item. Unlike Oblivion and Skyrim, you only brake invisibility if you exit out of sneak mode, initiate combat, or go through doors. Taking items don't remove your invisibility like previous games.

As stated before, I've found a workaround. If I pick a safebox, I take off all my armor. If I'm to commit mass larceny, I'll take my armor off. I'm also making a stealth suit consisting of 5 pieces of Shadow Dancer, 4 pieces of Durok's Bane, and 3 pieces of Night Terror.

Uncertain if you are talking Sneak or Invisible or both, however I think Invisible breaks immediately when doing an action such as stealing or opening a container (potion invisibility breaks if you fail to force a safe box however).

Heavy armor has a huge penalty to stealth/sneak radius so I would think only Light or (best) Medium Armor when stealing.

If you break Line of Sight however, NPCs will not see you even if you are standing.

If this was a previous Elder Scrolls game, you'd be right. Taking anything in Skyrim or Oblivion removes your invisibility. ESO's invisibility works a bit different. You can't leave sneak, go through a door, change zones, or initiate combat but you can still loot containers and pick safeboxes. When you use an invisibility potion, it automatically puts you into sneak. So yes, I'm in sneak mode while invisible.
