You just give them the weapons associated with it like 1h and shield, then slot a taunt. Their AI is very basic, run up to mob, use abilities in order placed on action bar. They automatically block, interrupt, and dodge roll regardless of what they are wearing. If you want them to tank another target that is a little bit tricky, use the pet attack command and hope their taunt comes off cooldown in time as they will use it once its available no matter if the target has already been taunted or not.

Unless they are max level and fully purple-gear equipped in heavy armor, I wouldn't expect them to survive in any type of melee role. I believe that's why so many people are complaining about them, they expect an under-leveled, under-geared Companion to fight like a high level player... and they don't. There is a reason ZOS gave them ranged weapons to start with... that was a big clue on their survivability. Also, plan to slot mostly self-heals until they're leveled and better geared!

Another tip, be sure to put their "used at xx%" abilities FIRST as they use the abilities from left to right in order. So putting self-healing/defensive skills first makes them prioritize those skills. I usually slot them in lowest percentage to highest... that way you know they'll use the skill when they hit 50% health as opposed to prioritizing one that they use at 75% health.
