    Warden
Wardens and perhaps Necromancer. The two DLC OP classes were designed as all-rounders by definition so it's easier to switch between all roles on them. The traditional 4 classes were more specialised and clunky in specific roles, meaning you will struggle with respective achievements.

Personally, I would lean Warden, because they have a very well-rounded toolkit for all three PVE roles and for PVP. You won't always be "the meta choice" but you'll be a solid choice nonetheless.

Alternatively, play the class you love and darn the meta. Achievement hunting means you'll be playing that class a loooong time, so you'd better love it.

I put DK because my main is a DK. but really class doesnt matter, the only achievements that are kinda class based are the ones that require stealth such as dark brotherhood and thieving which makes NB best choice, but they can be done on other classes but you will need to use invisible potions

For achievement hunting sorc. Specifically magsorc. It isn't the bleeding edge in end game content, but it it is a monster in pvp. But what gives it the edge imho is soloing. Achievement hunting will inevitably involve a lot of soloing, and nothing solos like a magsorc. Other classes may be good for soloing, but magsorc is king.

    Warden
If I would have 0 experience and based my choice only on class descripion and maybe reading skill & passives on some ESO wiki - I would pick Warden. Class theme is awesome (hunter / druid) and toolkit is universal & robust.

    Edit:
My main is a NB and I have been playing it since 2014... and I can tell you one thing: right now NB is nothing like what it used to be in the past. Even in PvE, if you think that it is good because it can sneak past enemies... it can't. All mobs pretty much have "true vision" that interrupts cloak. Especially in newer content. It is way better to pick any other class + vamp really (or stealth boosting sets).
Vamp basically is a substitute for NB toolkit that you can add to any other class and still have your class toolkit that makes it more versatile. Templar, Warden, Necro, DK, even Sorc with Vamp is better NB than actual NB...

i do agree magsorc is one of the best for soloing content and good for pvp as well. a solid choice for achievment grinding

You can easily get a much better stealth from stage 4 vamp now for speedrunning quest achievements and doing the stealth achievements. You have no idea how fast all of the main zone quests were being a stage 4 vamp and running past all the trash mobs to the end, even being able to skip 'unskippable' sub-bosses like in coldharbor or summerset. You can legit just run past them or run past mechanics that should require you to clear out mobs before destroying things like portals. With NB stealth alone you cannot do so because of recasting or being popped out of it earlier upon interaction than the sprint stealth with stage 4 vamp.

Playing sorcerer is like using a kind of crude but extremely robust and versatile tool. It doesn't impress much with theatrics or pull the highest numbers, but it has a very efficient toolkit. It's also an easy to learn, hard to master kind of class.

    Nightblade.

If you pick up a Khajit the race is quite friendly to switching between stamblade and magblade.

Some achievements are stealth related, and a Khajit vampire stamblade has IMO the best mobility while remaining in stealth (which also makes it useful for the endless stream of 'go to the place, do the thing/kill the thing' dailies that are tied to achievements for instance).

Other content (trials, arenas) you may find an easier time with a magblade; Khajit may not be the no. 1 choice for that (most people would probably choose Altmer or Breton) but is 'close enough' IMO.

Achievment are usually very easy to get except for vet dlc dung and hm trials.

For this kind of content usually specific class for specific role are used, so if you want play DD for them choose a class that is good at DD, if you wanna play tank or heal choose according.

Other achievments are just a matter of time and grind so class is not really that important.

You can equip stealth boosting sets on any class and do those "stealth" achievements on any class easily. Additionally, you can add Vamp toolkit to any class and basically have core NB abilities on non-nb.

The only achievements where class matters are the trial triple achievements and Necromancers will always find a place in organized groups because of their ultimate.
Templar, Warden and DK are probably good too because they can fill at least two different roles.
For Sorc and NB its kinda hard as long as they are not meta so I don't recommend them.
But honestly achievement hunting is a very tedious task and you shouldn't hunt on a class that isn't fun for you.

I like Magicka Templar for achievements because it has everything you need to just roam the world collecting everything. Dps, Heals, Buffs, etc. It has enough, with crafted sets, to do most public dungeons and some group dungeons, - which can have hard to reach lorebooks or skyshards.

    IMHO

Some achievements are just easier with stealth/invisibility. Yes you can make potions but it’s so much easier to get Imperial City achievements.
