Overland Content: This is my bread and butter, something I can do either solo or in small to large groups when I'm feeling more sociable (and sometimes the groups actually ARE sociable, too!).
Harvesting: Harvesting raw materials is a good, relaxing time-passer when I want to get in the game but due to health/whatever I can't do very much else. Stealing is on a different level and is sometimes part of my own *personal* 'Challenge Content'. Antiquities are another sometimes-interesting way to pass the time and find new things.
Roleplay: I have hardly ever interacted with others in ESO on a roleplay level, but even when I'm out and about solo, my head is into the character and how they would act/react. So I'm almost always playing the role, even if no other living person is likely to notice. I would like to get into RP more, but haven't put effort into finding a RP group/guild.
Housing: I know SO many recipes on my crafter and I have created SO many furniture items and collected so many more, but I keep doing little more than flailing about at a total loss as to how to find what I want and where to place it and what to do with it. I'm overwhelmed, to be honest, but I still love the system and am frequently trying to do something with it! The only problem is, the more they add, and they keep adding and adding, the more lost I get.
Challenge Content: Challenges I set for myself? Sure! I do that all the time! Dungeons? Yes, sometimes I'm rather in the mood for that, even tough ones! Trials/Arenas? Haven't done either.
PvP: I'm not really a PvP player. I'm far more into co-op than into competition, especially competition of the 'fight and kill other players' type. Not my cuppa.
I read your housing comment and I find myself frequently thinking the same, suggestion head over to the housing forum and look at some of the builds. People do incredible builds and check out SabbityDooms twitch stream for inspiration not to mention she's really cool.
Rank them in the order of your preference, feel free to explain your reasoning as well as to add anything to your list that you feel is missing here in the post.

I may go overboard with the storytelling. I usually need to psych myself up to do a round of quests for stories, since I spend the whole time taking screenshots (and I can end up with 1300+ screenies from one or two story quests), and I need to make sure the weather/time of day are appropriate. I love taking screenshots of my characters, but going through them afterwards can be annoying. I think I might be up to 400+ pages of story by now, and I still haven't gotten my main to Coldharbour yet, much less gotten any of my alts started... but I already have their backstories planned...
I also do have alts I use to farm dailies for motifs, but I have a problem in making some of them look too cool and then their backstory just flows out like water. I have at least two characters I want to start specifically because they were a farming alt and they just clicked with a story - I can't wait to start my Reachman. Also really excited to start my secondary as soon as I get my main through his story and figure out a hairstyle for the new guy.
