with an epic (purple) weapon and then switch to my main bar with legendary (gold) weapon, will the DoT update to the weapon damage from the main bar or stay lower like the backbar?

Yes, most DoTs update with each tick, and I think all AoE DoTs fall in this category now. A few single target DoTs still snapshot stats at the moment of cast.

One good way to tell what does what is if it is applied to the ground and area around you it takes your current stats in real time, but if the effect is applied to a target it takes a snapshot.

Like Proximity Detonation takes your stats at the moment it explodes, while Elemental Blockade is constantly changing based on stats. On the other hand things like Engulfing Flames and Burning Embers are directly applied to a target and will always deal the same damage regardless of your current stats, but of the stats you had at the time of casting. This means traits like Bloodthirsty are really good on ground based DoTs but not so good on direct DoTs placed on a target.
