Base game gear is extremely basic due to the technology. Motifs and appearances were scaled back. You won't see that updated nor the models for other earlier gear sets. Why? Because they're all offered in the crown store and people have paid real money to get them. Changing them upsets those people as it's not what they paid for. I think in the past this is what actually happened and those motifs were reverted from updated appearances.
New motifs are more complicated and detailed. Compare Daedric to Blackguard Vanguard and it's night in day in terms of texture quality and how it can be dyed.
ZOS is updating the original motifs by creating the Ancestral styles available from antiquities. High Elf, Orc, Barbaric, and Nord are currently available. Akaviri, Breton, and I believe Imperial ancestral styles have already been datamined. You can compare and contrast the new with the old in game but they're largely the same but upped polygons, textures, and better dye applications for the newer ones.
