You will never be the top end dps but can hold your own with the right gear and knowledge of trials, I have beaten every veteran trial and dungeon in game short of Markarth on bow/bow. Currently with Blackrose bow cheese on parse dummy my best is 91199 and 82.5k in VO and Tzogvins running parse food and actual dungeon skills, so don't let anyone tell you bow/bow can't be done

A spammable to consider is Silver Shards, at least for some fights, because it hits several targets at once.
The heal from Scythe has been important to me in a few fights.
Briarheart doesn't really heal for that much any more, especially in single target fights, especially since you're not using multi-hit melee skills like Rapid Strikes or templar Jabs.
Stormfist is a pretty good monster set that's pretty easy to get. Kragh is even easier if you're going to fight in melee range (which often you have to do when solo).
Ring of the Pale Order is an obvious choice when solo. Then both your 5-piece sets should be single-barrable, unless you want to give up a 5-piece bonus to use a Maelstrom bow. Also, if you build that way, you wind up with one armor slot for 1 piece of a set that you could choose to use on Trainee jewelry.
