If you're not looking for a class specifically, Stamsorc WW.

Easy to gear, can clear any content in the game and it has a very easy and relaxed gameplay

The answer is templar by a long shot, but you ruled that out. There is no easier way to break 90k on a trial dummy than with a stamplar. It takes 4 skills. It's honestly broken how easy it is.

Stam nightblade is the hardest, no question. Good DPS, but unless you want to practice until your fingers bleed, look elsewhere for PVE DPS.

Stam warden and Stam Necro are very similar in terms of playstyle. Both are 1.2.3 style rotations because both have a class centerpiece (sub assault and blastbones) that needs cast every third skill. If looking at solo stuff like VMA, I prefer stam warden to stam necro, but these are two of the strongest stam specs across the board (PVP/PVE/Solo/Etc.) Stam Necro does do more PVE DPS currently, but warden has a bit more utility (not counting necro ulti, which most raids want at least 3 of). I would call these a tie for 2nd place in terms of difficulty. Stam Necro is more desirable in a high end raid than a stam warden currently.

Stam DK, not hard to play but honestly, why bother in PVE.

Stam Sorc, also not hard to play, more powerful than Stam DK, certainly better solo, and puts out more PVE DPS currently on live. If you are ruling out Stamplar, this would be my suggestion as the next to try. I believe they are the easiest stamina VMA clear for what it is worth.

Stamsorc with crit surge is by far the easiest spec I have played in this game. Stamplar and Stamcro are very simple as well.
