So, I'm a long time eso player, but focusing on pve (dungeon and trials) achivments, skins and more.
Only time I've been to cyrodiil is for pve abilities. But if I want to try pvp, what is a good start, I'm talking about sets and such. And maybe an up to date build, video or text. So i can dipp my toes in pvp and see if I like it.

Sorc is actually one of the easier ways to break into PVP. The first thing you need to understand about sorc is that their offense and defense is very binary. You get kills with burst combos. Classic sorc burst is curse, mages wrath, stun, frags. The idea is to get the abilities to land at close to the same time, while they are stunned. If you get them below 20%, your mages wrath will hopefully finish them off. You defense comes from passive heals (power surge, entropy, maybe rapid regen), shield stacking, and line of sight. Sorcs generally have very good mobility for magic so play to it.
I generally play sorc with my front bar as offense, and my back bar as defense, mobility. Some very easy bars to get started (non Pet):
Front Bar: Crushing Shock, Crystal Frags, Mages Wrath (endless fury), Haunting Curse, Streak/Rune Cage (Stun), Meteor
Back Bar: Power Surge, Boundless Storm, Hardened Ward, Annulment (either morph), Dark Conversion, Resto Ult.
Keep up Power Surge and Boundless at all time. Use Dark Conversion when you need a burst heal or are low on magic (dont use if stamina is really low), keep up 1-2 shields at all times. Resto Ult is your Oh Crap button.
Streak is a better stun than Rune Cage, but it's a bit trickier to use, and requires getting closer to your opponent. Worth practicing a bit on a target dummy, just to get the timing down of a burst combo.
For Gear: Think one damage, one sustain, and a monster set to get you started.
Damage Sets: Spinners, Crafty Alfiq (bit of a hybrid), Clever Alchemist, Julianos, New Moon, plenty of options.
Sustain: Crafty (again not true sustain, but you can pair with another damage),Seducer, Lich, Bright throats, amber plasm, Shacklebreaker.
Monster: Lots of options. I recommend pirate skeleton when learning on sorc. Sorc doesnt really rely on heals like other classes, so the penalties from PS arent a massive drawback. Skoria, Bloodspwan, or even mix matched pieces all work fine.
If you want to squeeze in a mythic item (I really like the ring of the hunt in PVP) you can drop one piece of a monster set or go with a front bar, back bar setup with something like spinner lich. Dont over think gear too much.

Sorc is the easiest class to play. Even in the malacath proc meta.

But yeah from all magicka toons in the game Sorc is probably the easiest one to master.
Few things to add on Oreyn post.
Engine guardian combined with Dark Conversion/Deal on Sorc makes beautiful combo, because you can easy transfer resources from guardian
Another thing most people play with streak as it's probably the best cc in the game currently, but Ball of Lightning is probably the best escape skill, it depends how you would like to play.
About ult, Resto Ult is great and very solid choice, when you get more familiar with PvP I'd recommend you to give a try to Temporal Guard, this skill on Sorc is pretty insane you know... 4 streaks and then bam, go back and streak away In other direction.
As for offensive ult there are few options. Negate for group play is almost a must, this skill wins battles in PvP. For solo play it depends on your build. If you use streak, go for meteor (you cast meteor and right before it lands you streak through target so he can't block it, combine it with curse and wrath and you have almost guaranteed kill) if you go for BoL choose Greater Storm Attronach, it gives nice stable dps and additional line of sight tool. Overload requires specific build to be useful, that's why I don't recommend it for PvP beginner.
And remember, on magsorc line of sight is your biggest ally
