I think you can make pretty chunky armor with the right style pages and there are some styles for massive maces. No book so far but there is a personality available that reads a book to get sometimes. I personally don't want my templar to look comically large and chunky as she is a delicate flower acolyte of Stendarr. I guess the rest you have to try your best with skills and champion points. Maybe they will make a personality like this or outfit,could be cool.

Urgh, no. Keep that WoW aesthetics away from ESO.

You can make a templar look like a holy warrior just fine, which in my opinion look much better than that.

You can view all available motifs here, styles here, or both in-game by going to an outfit station or the style tab of your collections menu. The latter may be missing a few. You can view all costumes here.

Honestly there is a lot of armor that could fit this vibe, it's all up to your preference. Pretty much anything can be dyed gold, in the end. I figure you'll probably mostly want to look at heavy armor styles, they're the bulkiest.

There are no weapons that look like books, but you can use a hammer and shield, or a two-handed hammer (or both, since characters can have two weapon sets).

There's a lot of options for chunky heavy armour. Go to an outfit station in a city and you can preview all the available styles. If you make it an outfit instead of your actual armour you can use heavy armour for the look and then actually wear whatever works best for your build.
