Fighting a Nord in Skyrim the right way

I found a special encounter in West Skyrim, the Dunk Nord, who's apparently a Mage. But this is a drunken brawl with a Nord, you can only do it one way.

Makes you wonder doesn't it. When the Nords in TES V tried to free themselves from the empire, why did the empire even want to keep them?
