Hoping someone can help me out, returning after about a year off. I have 7,600 crowns & 118 writs for use. What is the best way to turn this into gold?

The Writs (I assume you meant the Writs themselves, not the Writ Vouchers):
The easiest way to turn writs into gold is to sell the writs. Join a trading guild, and list the Writs.
If you have the crafting skill, and the materials, you can also do the Writs and get the Vouchers.
You can then sell items that you buy in exchange for Vouchers at the Writ vendor outside the Alliance capitals.
Some writs are trash, because the materials they require cost more than what you would get for the Voucher profits. Nobody will buy these and you'd also waste your mats, so just delete these.
The Crowns
The only way to turn Crowns into gold is to do a Crown-gold exchange with Crown Gifting.
Join a Crown Trading discord to find reliable buyers, and offer your Crowns in exchange for their gold.
*Bonus tips*
If you have Greymoor, farm the new Motifs and Schematics and sell those, you can make nice money with them.
Doing Antiquities also gives you around 300k raw gold from selling the Treasures to a vendor.
If you don't have Greymoor, you can also farm older content for Motifs to sell.
And if you have max Legerdemain skill, you can Steal stuff and sell to a Fence for easy 20k+ per day.
