Having crafting skills also makes some quests and tasks a lot easier, so when, for example, your tank with the subtlety of a angry mammoth gets told to sneak into somewhere and steal something you can brew a stock of invisibility/speed potions.
PC as well there seems to be a lot less harvesting going on. Even when there is just taking a walk slightly away from the path while on quests instead of charging down it on horseback usually produces a pretty good take.

More recently, tempers (such as Rosin) have had a spike with all the combat changes in Greymoor ... for players that needed to change their builds for vampire, PvP, the new mythic items, or the new gear sets.
Crafted spell power potions are still high in demand for Trials raid players or high end PvE content.
Still some mild demand for new players who just started Greymoor and need training gear ... and veteran players trying out the crafted gear sets that were recently buffed (e.g. Ashen Grip).

Writs are far and away best way to make gold daily, routinely.
Depends on how broad you define crafting.
If that includes doing daily crafting writs, then yes, you can make gold... lots and lots of gold
Why would you not sell crafted gear?
I make at least 1-2 mill each weak only from crafted gear.

For weapons I sell sharpened but precise works well too.
for staffs infused sells better.
usually check alcast or other websites for begginers gear. and use MM to check the prices with the graph option to see how it sells, you can also compare with TTC if that niche is overcrowded.
and there are enough different type of sets that can be crafted. that 30 slots per guild is not enough.
use lazy set crafter to check cost and then apply a price accordingly. apply like a 50% profit margin and dont mind other people under selling it. they all eventually fade and dissapear.
