Why do they all go down at the same time? Convenience
It’s convenient that the servers are maintained first thing on a Monday (or occasionally Tuesday if Monday is a holiday) European time. It’s the start of the working week and the end of the weekend. I’m sure there are people in Texas (home of PC NA I believe) who would love maintenance to start a bit later, but that might mean more EU downtime during peak hours, which no one wants. Having to wait until 5pm to start playing once a week is fine by me.
To be honest I’d rather they did maintenance every day if it would really improve performance....

There are two servers. They could do them at different times. It's not rocket surgery.

No... but it’s a bit like rocket science
(Although they did bring people back from the moon with a computer less powerful than a digital watch and a load of brainpower)
