Need a hand with resetting my addon settings

So I've been trying to troubleshoot for the last few days, after noticing a bug with Lui Extended where the health bars don't extend when eating buff food/drinking buff drinks, so I want to reset my addon settings to the standard to see if that will fix it. I've tried deleting the AddonSettings.txt file, uninstalling and reinstalling the addons, so forth and so forth.

So how on earth do I reset the addons (like Lui Extended and others) to default?

Any help would be appreciated. Thank you
