I'm not aware of any "shoulderpads" existing in this game.
There are, however, many armors that incorporate spaulders or pauldrons as a design element. This isn't surprising, considering historical armors in our world used these to protect the shoulders of combatants. The styles designed for this game in general give a nod to historical armor designs. This is seen not just with the inclusion of spaulders and pauldrons, but also with couters, poleyns, tassets, rerebracers, and more. With close to 100 styles in the game, there is plenty of variety to be had on all of these elements. You can find shoulder styles that are small to bulky, and even ones that are more like shawls. If you do not like pauldrons, use a shawl.

If we can hide our helmet, then we should be able to hide shoulders, without feeling the need to resort to some fantastical reason like using a spell or enchantment to make them invisible. Our helmets are already invisible, if we want them to be, without the need to come up with some in-game, lore reason. Same should be for shoulders.
Who cares if they put all this effort into simulating various styles of shoulder armor. They've also done a ton of work on creating various styles for head pieces, but we can easily hide those anyway.
I can see the reason behind not wanting us to be able to hide chest and legs, but why we can't hide other parts is baffling. Unless they're afraid of some "slippery slope."
