Reasons why:
A. Conveience. Its a lot easier to be able to craft everything on one character, especially if you don't have addons to track your research progress
B. Motif knowledge increases the chance of Master Writs dropping from max level crafting writs, and unless you want to duplicate motif knowledge, its much cheaper to do it on one character
YMMV, but those are why I have one main crafter. My other alts can craft max level writs, but they don't have the research or motif knowledge that my main does because I can't be bothered to duplicate that effort.

If your are into achievements though crafting does earn some, and your main won’t have them.

Tip: make your crafter an Imperial to get Imperial motif for free.
If you don’t have ESO+ and the extra storage and endless crafting bag it’s almost impossible to have a regular character who also does crafting.

Would that still work if I use a race change token??

Race change tokens don't change your original racial motif.
So if you have an Imperial and change race, you will still know the Imperial motif, but not vice versa.
