Turning the Daedric Princes into another version of a Mundus Stone is just the same problem Vampirism creates. The lore and personal meaning behind the choice is thrown out the window and choosing a Prince becomes mandatory for builds since all it does is give you yet another boon. Who cares if you're pledging your soul to Dagon, the Prince of Hell itself, you get some sweet stats!
Players would never be happy with it just being a story choice with no gameplay effect which means it'll have to do something to your character, and if that's the case it'll need some kind of debuff to counteract it, in order to make the choice more meaningful.
