So I was participating in the “mount and 5 crates” thing today and I accidentally killed two creatures. Would that still count or no?

Edit: yes I was fully logged off before logging back in, and I did purposely kill them, however it was two monsters in one go instead of just one, so I’m worried that won’t count as the prompt said “a monster”

I'd say yes, it counts, as long as you killed the monster during the right time span. It doesn't matter if you killed more than one.

If you are on console, you can earn your rewards by logging into the game on Sunday, June 9, between 3:00PM EDT and 11:00PM EDT and killing a single monster. You will receive your rewards by June 19.

The wording is a bit weird but when they've done things like this before killing 1 monster was the minimum required to qualify and there was no maximum.

Basically they want you to have logged in and played during that period, not just logged in and straight out, or been afk from the start to the finish, and I think killing a monster is the simplest, most universally accessible thing they can check for to see that you've been actively playing. There probably are other ways they can check, but this keeps it simple for both players and ZOS.

(Although the first time they did one of these I was worried that there might be different categories of enemies - what if I killed a wolf and only later found out that counts as a 'creature' and not a 'monster'? But apparently it's literally any enemy.)
