do poison injection stack with poison enchant?

poison enchant has a chance to apply the poisoned debuff. Poison injection deals poison damage, which i don't know but i assume it also has a chance to apply the poisoned debuff.

if one procs it overwrites the other? so if using a source of poison it's better to replace the enchant with something else?

    Would just mean you get a higher chance of proccing poisoned.

    They both can proc poisoned. The debuff will just refresh whenever procced. Keep in mind tho, Argonians and Bosmer or people having a poison resist enchant cannot be poisoned due to the resists giving them immunity.

    If some source of posion dmg procs poisoned status effect and then during next 6 seconds another posioned status effect will be procced it'll refresh duration of currently applied status effect.

    Not really. Dont forget that out of all dmg types , enchantments have the highest chance to proc status effects. Poison dmg enchant is one of the hardest hitting enchantments for stamina characters. Also chance that both posion dmg enchant and poison injection will proc status effect at the same time is very low so even when one will overwrite another it'll still additional dmg.

    If it's PvE then oblivion dmg enchant sucks since it cannot crit and have low tooltip this is purely PvP enchant. Disease status effect applies major defile which is also not much needed in PvE so posion dmg enchant still wins here by small margin in PvE. Posion dmg enchant in pvE is simply the best choice for stamina character in mostof the scenarios. The only situation where it can be beaten is when You face undead/daedra opponents. Then best choice is prismatic dmg enchant.

    What you say is 100% accurate. I would add absorb Stam to the list under poison and over disease, now that absorb Stam is physical damage, you can average 300 Stam regen from the enchant, 150 a second, with an infused absorb Stam enchantment. Very useful.
