If u have eso plus all dlc are unlocked. You will still see the option to buy them in the crown store.
You do have to levle what you want but everything should be available to you.
The top 5 things on my list would be.
Get started on crafting.
Level more than one toon.
Do the writs every day.
Take a few minutes and or as you play pick nodes .
Get some addons if your on pc
1 - I just signed up for one month of ESO plus, mainly to unlock all DLC. When I login, I still see that I only own Morrowind. Do I need to do something different to unlock all DLC with ESO Plus?
2 - I want to start a fresh character (Sorcerer/Breton preferred) and wondering if I can choose my starting area after unlocking ESO Plus.
- Are a lot of DLC level and class locked? Since I'll be starting from scratch, just curious how that works in general.

Sad to see Summerset is another payment but oh well. Any others recommended purchases I need to know about beyond ESO+ and Summerset/Morrowind?
I failed to mention I liked leveling in WoW by running dungeon finder but don't remember ever using that feature in ESO. Is it similar?

Especially a minimap is prone to distract you from the game world and markers for lore books and sky shards will make it a "running simulator", where you just run or ride from marker to marker - don't do that to yourself.
Breton Sorcerer I would pick a different class especially if its your first time in ESO with the latest patch the Sorcerer class is getting beat like Rodney King with the nerfs especially if you want to PvP you would probably have a lot more fun with a Breton Nightblade or Templar in general tho since thos classes are more fleshed out.
Alliance only effects what side you are on in Cyrodill PvP THIS CANT BE CHANGED later on once you pick an Alliance your stuck so make sure that you and any friends are on the same alliance so you can PvP in Cyrodill together cause if not you'll have to make another character which I guess isn't a huge problem since you get 8 slots free.

So was that a confirmation I can pick my starting area if I have ESO Plus? I just created a new Breton Sorcerer and it put me in Morrowind..

Marker to marker running - aka 'questing in ESO'?
I actually have the opposite experience; I love the addons so I don´t have to run around and look for skyshards on my alts when I´ve already done that content. I just run marker to marker when I am on my way to a more interesting location, or just listening to something interesting on youtube... it´s not too boring then.
In Murkmire though, I don´t want the addon markers. It´s a new zone so I like to explore it. But as for the base game... meh. If I´m speedrunning for skillpoints addons are a godsend.
EDIT: Oh and the treasure map (+others) addon is great... map pins methinks it´s called. I loved the treasure maps in Skyrim.. where there were actually readable, but in ESO... 'oh, I need to find a tree next to a stone in Glenumbra. No problem!'. It is just a huge timesaver for what is actually chores.
Since I can choose any Alliance, what impact if any, does that have on the game as a whole?
My point is, that these add-ons speed up some things, but at the same time they convert the game into a chore runner. Speed running is not playing the game, it is running chores - and then the game doesn't feel like a game anymore, but like work.

Well this is true. I just don´t have a problem with it since when I speedrun I have a goal in mind (usually gathering skillpoints for a certain build) and I tend to focus on a medical lecture or a podcast or something that I have on while playing.
