Unless you're planning on doing vet content like vet dlc dungeons and trials the race doesn't matter much, and if you do the difference between most of the suggested races is pretty minimal. You'll have better sustain on certain races, and slightly higher damage on others. Honestly I'd say just pick whatever race and class you want and have fun with it. My main is an altmer stamblade and I do perfectly fine in all the content I do on him, so don't let anyone give you any crap if you decide on a non optimal/meta character.
wardens and sorcs have companions. if you specifically want an animal companion you can either activate a pet from the crown store or play as a warden. one of my complaints with ZOS about the warden class is that it followed every fantasy MMORPG druid style class and had it have a bear companion. I don't get what the hell druid/wardn what ever the hell you want to call it always has to have a bear theme; i.e transform into a bear or summon a bear, why couldn't they due like a lion, or a crocodile, or something different instead of the bear ultimate. Sorcs do Daedric pets. their ultimate is a giant storm antronach. if ESO/ZOS ever goes ahead with the NECROMANCER CLASS I imagine there will be some kind of dead zombie pet which would be cool.
also Nightbldes have an ability that summons one or two shadow Spector things that help fight with you briefly but they disappear after a while thus not being a true pet.
as far as race goes it doesn't matter to much on race to pair with the class. I have seen lots of guys that use strictly stamina based races on heavy magic builds and they kick azz! but having said that, certain races give specific bonuses that would be helpful in optimizing your build. Pet abilities are all magika abilities with the exception of one if I remember correctly, and that is one of the cliff diver morphs. so you essentially want to go with a race that is heavily magic based. High Elves, Bretons, and Argonians have the best magic stats hands down. Argonians have a huge bonuses to healing as well. if you go with the warden class; which has healing abilities, I would go with a argonian if you are strictly going heavy pet based build. the argonian heals give a lot to keep you alive in the fight. for the warden if you are going strictly pet based damage I would in this order pick Argonian, Breton, high elf. if you are going for elemental damage then go with the high elf first. for sorcs, you always pick High elves, they have an entire skill tree devoted to lightening attacks and the high elves have the largest overall buffs to elemental damage. the only exception is the dark elf's fire damage buff but his lightening and frost damage is not as much as the fire damage. the high elf's elemental buffs are consistent across the board.
hope this helps
