All points in stam, is it a good idea to use points in health too instead of maxing out stam?

    Health enchant or prismatic enchants
Valrien Dravic -- Level 50 Dunmeri Sorcerer (EP)
Garahel Dravic -- Level 50 Bosmeri Nightblade (EP)
Tamriel Unlimited was a mistake. One Tamriel was a bigger mistake

Depends on the build. Ideally, you are maxing stam and then using a health enchantment on your chest piece AND buffing with food. For overland, use bread that you can steal from literally anywhere (I find Undaunted areas to be ripe with bread). For more serious content, I use blue food and for the hardest stuff, purple drinks.

Some builds will require a few points in health but I'm not familiar with them as I am a min/max'er myself.

All in all, you want about 17k minimum.

Drathus Delenu- Dunmer magDk: Shehai Shatterer, Mageslayer, Stormproof, Peak Scaler, Clockwork Confounder, Orderly, Master Wizard, Cloudrest Hero, Undaunted, Dragonstar Arena Champion
    Thoronir Rolston- Breton petsorc: Stormproof
Zaakazha-Redguard stamblade: Boethia's Scythe, Clockwork Confounder, Maelstrom Arena Champion, Dragonstar Arena Champion

    Scrubs:
    Justinius Maximus Decimus- Altmer magblade
    Agronak gro'Mashul- Orc DK Tank
    Valerya Hawkcroft- Breton healer
    Zaaka- Imperial stamDK/crafter

Rank I: Increase your Max Health, Stamina and Magicka by 1% per type of Armor (Heavy, Medium, Light) that you have equipped.

Rank II: Increase your Max Health, Stamina and Magicka by 2% per type of Armor (Heavy, Medium, Light) that you have equipped.

This is why you see people running 5/1/1 armor setups - for a stam build, that would be five pieces of medium armor, plus a monster set with a heavy head and light shoulder (or the other way around). An extra 6% Health, Magicka, and Stam adds up.

The quick test is to check if you are dying a lot or not, in vet dungeons (or normal DLC dungeons). Overland quests don't count, they are super easy - and PvP doesn't count either, you will always die a lot there if there are more enemies and there will nearly always be some better players than you too.

If you are unfamiliar with vet dungeons, you should have about 20k health to avoid a lot of the one-shot mechanics. You can get by with less health (18k - or less for sorcs with shields) when experienced. You will die a lot if you try vet trials with under 20k health though. The challenge is that you will do more damage the higher your stam (or magicka for mag dps builds), and putting resources into health normally means you have less in your main damage-dealing resource.

Remember that other than attribute points, you can get more health from:
    1. Champion points
    2. blue food by preference, or purple food, or dubious cameron throne (drink), or some of the new gold food/drinks if you can afford them
    3. One of the mage guild Entropy morphs gives you +8% health if you can slot it
    4. Undaunted passives - worth doing pledges and dailies to max your Undaunted skill line. Works best if you have a 5 medium +1 light + 1 heavy armor setup.
    5. Various armor sets and monster sets can have a health buff as one of their effects, e.g. Valkyn Skoria one-piece gives a health buff. Changing your monster set is one of the simpler ways of fine-tuning your health.
    6. Enchants, especially on the major pieces - head, chest, legs. Try a tri-stat prismatic defense rune on one or more of these pieces, especially if you have the infused trait on it.
    7. I think there is a Heavy armor passive that buffs your health a small bit if you have some heavy armor on.
    8. If your tank wears the Ebon set, you can get a 10% health buff from that, and you also get a 5k health buff in Cyrodiil.
